About the wine
The history of the Massimago winery began in 2003 when the young agronomist and entrepreneur Camilla Rossi Chauvenet started her own project on the Massimago winery, which has been owned by her family since 1883. Classic Valpolicella wines such as Amarone, Valpolicella Superiore, Valpolicella Ripasso and Valpolicella DOC are produced. With lots of energy, creative ideas and pep, Camilla manages to breathe new life and character into these classics. Tasting note
Intense ruby red, distinct notes of plums, black cherries, cloves and black pepper. Velvety on the palate with aromas of red cherries and plums. Finely balanced Amarone between sweet and savory, earthy and rich.
Culinary recommendation
Goes well with roasts, hearty meat dishes and game.
Vinification
Selective hand picking of the flawless grapes. The intact grapes are then stored in flat wooden boxes for 80 days to dry in specially designated drying rooms. During this drying period, a certain temperature and humidity must be observed, which is strictly controlled. During the subsequent vinification, the mash is stored for five days at a cool temperature to produce a special aroma. For maturation and biological acid degradation, the wine is stored in French barrels for 24 months. The wine then matures for a further 12 months before being sold.
