About the wine
The first Batič wines were born in the 16th century and were minted by the experienced hands of the monks from the Batič estate in Šempas. Since then, the estate has changed considerably: the paintings on the walls have faded, the names of the monks have been forgotten. The only remaining legacy of the once proud monks is the knowledge and tradition of high-quality wine production, which has been passed on from generation to generation over four hundred years. Batič wines are more than an homage — they are a continuation of the traditions and methods of the Šempas monks. They are their legacy. Miha Batič, who runs the winery in the youngest generation, is known for his white wines, which he leaves on the skins for a particularly long time, but also for his Cabernets and Merlot. The wines are produced biodynamically (Demeter) from old vines in harmony with nature and lunar phases. Batič works like a possessed person in the vineyard. He can tell a story about every floor of his vineyards, which are completely green and partly laid out in terraces. Batič's vineyards are located in the limestone hills of the Karst with its underground rivers and sinkholes. The wines are fermented and aged in Slovenian oak barrels, where they are never touched again. No yeast agitation, no shaking, no sulfurization, no filtration.
