Vinification
The grapes are destemmed and pressed before they reach the winepress. The suspended matter is separated from the grape must at a very low temperature and the clear must is transferred to the fermentation vats. After adding selected yeasts, fermentation is monitored. The fermented wine is transferred to a fermentation tank to remove the remaining suspended matter. During maturation, the wine is refilled to separate the wine from the sediment. It then matures on fine yeast for two months before being filtered and bottled.
