Goes well with aperitifs, light appetizers, fish dishes and seafood.
Vinification
The grapes are harvested by hand in September, then gently pressed and the must is statically decanted. The primary fermentation takes place in stainless steel tanks with selected yeast, after which it rests on the noble yeasts for 1 month. The wine is then clarified and transferred to autoclaves to form a foam. The new fermentation takes about 15 to 20 days. After bottling, it rests for a few weeks until the sparkling wine is ready and can be enjoyed.
