About the wine
Graceful landscapes of the Canary Islands give us these grapes, from which the winemaker from the Spanish winery Borja Pérez Ignios Orígenes conjures up this red wine with refinement and sensitivity. You will certainly have a lot of fun with the fine Baboso Negro Ycoden Daute Isora DO, which was produced in 2016.
Robert Parker: 93/100
Tasting note
Brilliant ruby red. On the nose, notes of black fruits, cloves, black pepper and smoke that comes from the volcanic soils of Tenerife. Mineral and long-lasting on the palate with a pleasant taste of moist earth and ripe fruit.
Culinary recommendation
Goes well with beef, pasta and veal.
Vinification
30% of the grapes are destemmed, lightly pressed and macerated in small containers for 48 hours. It is then fermented for three weeks in stainless steel tanks with native yeasts. The wine is then aged in 600-liter French oak barrels for 12 months.
