Tasting note
Delicately straw-yellow in color with fresh green complexes in the glass, Babylonstoren Sprankel spoils you with a beguiling bouquet of Golden Delicious apple, green lollipop and fine tropical fruit as well as with yeasty notes of fragrant biscuits and freshly baked brioche. On the palate, this stunning Cap Classique method offers pleasant freshness and excellent balance as well as an extremely fine mousse and soft acidity, which perfectly rounds off the creamy cashew nut notes on the palate. Delicious nuances of lime zest, peach and sparkling grapefruit complement this terrific culinary experience, together with fine mineral notes and a long-lasting finish.
Culinary recommendation
Goes well with shellfish, caviar, seafood or poultry dishes.
Vinification
The grapes come from the Simonsberg slopes between the Franschhoek, Stellenbosch and Paarl wine-growing regions. The grapes were pressed in whole bundles and the first fermentation took place in stainless steel tanks. The still wine was then stored on the yeast for 7 months before being bottled for the second fermentation. There it matured on the lees for another 52 months.
