Tasting note
Color: Deep garnet red with purple reflections. Nose: An expected complex basket of blackberries, plums and spices with a touch of tanned leather and fresh lavender. Palate The palate is concentrated and seamless with red plums, cherries, and blackberries all clashing. A zesty, spicy backbone of subtle smoke and tar blows through silky, soft tannins to a long, generous and expressive finish. A wine that evolves in the air in the glass.

Goes well with lamb chops or grilled pork
Vinification
Fermentation: Fermentation takes place in small, open fermentation vats using techniques such as manual pomace hat and délestage (pumping around the must) to ensure gentle extraction of color, tannins and aromas. After fermentation is complete, the wines are gently pressed in a basket press to preserve the purity of the juice. The wine is then aged for 14 months in used French oak barrels, which contributes to the development of complexity and integration of aromas without overlapping the fruit.
