Tasting note
The Big Easy Cabernet Sauvignon is medium bodied with a crimson core and purple rim. Red fruits on the nose suggest a more elegant appearance, resulting in a juicy taste with grainy tannins. Notes of moist earth and tobacco blend with creamy oak, sweet spice and milk chocolate. Plush, ripe plums and sour cherries line the palate with a soft, almost tropical finish. The rich tannins will integrate over the next few years as the wine becomes more and more complex.
Culinary recommendation
Goes well with pasta and pizza.
Vinification
The Cabernet Sauvignon comes from the Helderberg region within the Stellenbosch appellation. In addition, selected plots from various coastal regions such as Paarl and Robertson were moved into to complement the style. The Cinsault grapes come from a special vineyard planted with 26-year-old bush vines in the Perdeberg region. The grapes were harvested by hand in the early morning coolness. On the sorting table, all excess stalks and low-quality berries were removed. Fermentation took place in open 7-ton stainless steel tanks, and the mashes were pumped around three to five times a day or tapped by hand to ensure maximum color removal from the skins. Each grape variety is aged separately in oak barrels before the wines are finally blended and bottled.
