Tasting note
The nose is delicate and sophisticated, shy at first and then seductive with intense dark berries and classic graphite aromas. The start is soft and silky, with aromas of blueberries, blackberries, dark licorice and garrigue that add complexity to a dense, well-structured mid-palate. The wine is richly structured, concentrated, austere and elegant, with powdery, dusty, fine-grained tannins and a fresh acidity that balances out an attractive herbaceous note. Boysenberry and cocoa powder linger in the mouth, with soft notes of anise and black cardamom.
Culinary recommendation
It goes well with all kinds of fine meat dishes, including South African game such as springbok, wildebeest or kudu.
Vinification
The grapes were picked by hand into small boxes and then sorted by berry selection and careful destemming. The grapes were cold macerated in tulip-shaped concrete containers and fermentation took place at temperatures between 27° and 30°C, with frequent pumping to extract aromas, color and tannins. After spontaneous alcoholic fermentation, prolonged malolactic fermentation took place in 225 liter barriques. The wine was aged for 22 months in 80% new, lightly toasted barrique barrels.
