About the wine
The little brother of the famous Cervaro della Sala shows delicate notes of white flowers and slight citrus notes. The palate is characterized by pleasant minerality, elegant and with appropriate acidity. Partially aged in barriques.
Tasting note
Straw yellow with golden reflections. Seductively scented on the nose: ripe pome fruit, peach, honeydew melon, some blossom honey and a touch of vanilla as well as roasted aromas. A refined yet creamy start on the palate, elegant acidity, aromatically fresh, with citrus and roasted notes as well as ripe pome fruit. Long, very well-balanced finale. A very successful “little brother” of Cervaro della Sala, who stands out for his freshness and finesse.
Culinary recommendation
Goes well with more substantial starters and fish dishes.
Vinification
The grapes come from Castello della Sala vineyards, which extend to 270 to 400 m above sea level on sedimentary soils rich in marine fossils. After pressing, the must remains in contact with the skins for several hours at 10° C in order to obtain as many flavorings as possible. It is then fermented in French barriques and partly left there. The remaining young wine matures in steel tanks and undergoes only partial biological acid degradation so that the fresh acidity is better preserved.
