The Pinot Noir grapes for this Cap Classique were selected from four different vineyards in Elgin, Durbanville, Stellenbosch and Robertson to achieve the variety, complexity and depth of aromas we need for our vintage rosé. The Chardonnay grapes come from our winery in Robertson, where the vines grow on calcareous soils. All grapes were harvested by hand early in the morning and transported to our wine cellar, where the Pinot Noir and Chardonnay were gently pressed as whole grapes. What is unique for South Africa is that Pinot Noir and Chardonnay were pressed together in the same press. The fractional extraction from the whole grapes ensures that only the best quality juice is fermented. After fermentation, the wine was slightly polished and bottled for the second fermentation, where it matured on the yeast for 4 years and was then degoged.
