Tasting note
Only a few districts in South Africa can really ripen Cabernet Franc as we do in the Bangkok Valley. When overripe, it becomes jammy; when underripe, it becomes herbaceous and vegetal. We use grapes from a single vineyard to create this delicate and harmonious wine. The nose explodes with scents of tobacco leaves, ferns, spearmint, raspberries, and black currant leaves. On the palate, the tannins are firm and dry and the fruit weight is elegant and delicate. The wine has a good length and fullness until the finish. A dry but long aftertaste.
Vinification
The grapes were harvested by hand and the berries were sorted into stainless steel containers fermenter. Fermentation began spontaneously and was completed with a pure variety. Extraction was carried out using a combination of punch-down, rack-and-return, and pump-over methods. The batches were gently pressed and immediately transferred to small French oak barrels, where they completed malolactic fermentation. The components were bottled three times to improve clarification and development. The blending process took place after 14 months of ageing, after which the resulting mixture matured in barrel for a further 4 months. After a total of 22 months, the wine was bottled.
