About the wine
First produced in 1997, the Hess Estate Cabernet Sauvignon with origin Napa Valley closed the large gap between the Cabernets Hess Select and Hess Collection. The grapes come 100% from our own vineyards on Mount Veeder and the Pope Valley. The mash fermentation is temperature-controlled in stainless steel fermentation tanks that are open at the top. The young wine then matures in oak barrels.
Tasting note
Dark red in color with purple reflections. The fragrance blends aromas of currants and red cherries. On the palate, currants and red cherries are again underpinned by scents of cedar wood. The long finish is full-bodied with wonderfully fresh tannins.

Swedish roast (pork loin filled with dried plums), veal
Vinification
The grapes come mostly from Pope Valley and Mount Veeder. Each vineyard is harvested individually and fermented in mainly closed fermentation tanks. The wine is aged for 18 months in 35% new French oak barriques.
