About the wine

With sensitivity and intuition, the winemaker from the South African winery Warwick masters this red wine in the fertile and beautiful landscape of the Coastal Region. Christmas 2018 is just around the corner! Make the most of it with this dominant red wine 2015 — Cabernet Sauvignon Blue Lady. Culinary tip from Flaschenpöstler: This Cabernet Sauvignon is very good to serve with Gruyère burgers or red meat.

Tasting note
On the nose, aromas of dark berries, tobacco and plowed soil. When the wine opens, it develops into plum, cassis and blackcurrant. On the palate, it is packed with finely structured tannins and supportive oak spice, cedarwood and pencil chips.
Culinary recommendation
A classic wine loves classic dishes, such as fried pork loin with porcini salt and hand-cut French fries, or a rumoured pork loin served with parmesan puree.
Vinification
The grapes come from two different vineyards, one facing north while the other has a south-east slope. Each layer was read separately, unstemmed and sorted by hand. Depending on the tannin structure, fermentation took between 14 and 21 days, with three refills per day. As soon as fermentation is complete, the mash is pressed and the wine undergoes malolactic fermentation in wooden barrels and tanks. After fermentation was complete, the wine was stored in French oak barrels (38% new barrels, 33% second fill, 20% third fill and 9% fourth glaze) for 22 months. The Blue Lady was then assembled, of course clarified and filtered before bottling in May 2022.
