Cabernet Sauvignon Estate Santa Cruz Mountains 2018 - Mount Eden Vineyards

About the wine

The story of Mount Eden Vineyards began with winemaker Martin Ray, who began planting vines on a ridge of hills in the Santa Cruz Mountains in 1945. Today, this winery covers 16 hectares, which are mainly planted with Pinot Noir, Chardonnay and Cabernet Sauvignon. Mount Eden is said to have the longest Chardonnay and Pinot Noir tradition in North America. Since 1981, it has been managed by Jeffrey Patterson, who is responsible for the consistently high wine quality, which is even comparable with that of Monte Bello Ridge.

Tasting note
This Cabernet Sauvignon delights the nose with expressive aromas of cassis, plums, cherries and oriental spices. The body is balanced yet powerful, the tannins are soft and reserved. The long finish reveals aromas of cassis and herbs.
Culinary recommendation
Flaschenpöstler-Tipp: Cabernet Sauvignon Estate Santa Cruz Mountains passt bestens zu Ribeye Steak, Pizza mit Pilzen und rotem Fleisch.
Vinification
The must is manually mashed in small stainless steel tanks and macerated six to ten days after fermentation is complete. 50% of the barriques are aged for 24 months in French and 50% in American wood, the proportion of new wood is 50%. During aging, the new wine is separated from sediment three to four times a year (tapping) and bottling takes place without filtration.
