About the wine
David Ramey earned his spurs in some world-famous farms before founding his own winery in Healdsburg/Sonoma County in 1996. Château Pétrus and Dominus, for example, are among his list of references. He combines the methods of the old world with innovation from the new world, creating wines that are characterized by incredible balance and longevity.

Tasting note
Deep ruby red, blackcurrant and blackberry penetrate the nose alongside cedar and earthy notes. Impressively intense palate pressure with supple tannins, a wide range of aromas and a long-lasting finish. Unique!
Culinary recommendation
Flaschenpost team tip: Cabernet Sauvignon Pedregal Vineyard goes perfectly with pizza with mushrooms, red meat and ribeye steak. Our recommendation: The white wine tastes best at slightly chilled 15°-18°C. The wine should be enjoyed during this period: 2016 - 2034.
Vinification
After manual harvesting, the selected grapes are subjected to a cool maceration period. Fermentation then begins using the vines' own yeasts. The wine matures for 25 months in new French barriques (Taransaud and Darnajou) on the yeast and yeast attachment stirring (bâtonnage) is regularly used. Biological acid degradation also takes place during this time. The wine is then bottled unfiltered before it is sold.
