About the wine
Tenute Olianas is located in the heart of Sardinia. More specifically, in Sarcidano, a plateau in the center of Sardinia. 60 km north of Cagliari, 65 km east of Oristano, on the southern border of the province of Nuoro. The property covers over 20 ha, of which 16 ha are planted with vineyards. Tenute Olianas works organically and thus dispenses with the use of artificial fertilizers and synthetic products.

Tasting note
Intense ruby red. Spicy, expressive and warm on the nose, harmonious and velvety soft on the palate, with delicate plum and subtle wood notes in the finale. Long finish.
Culinary recommendation
Goes well with gnocchetti sardi with salsiccia, a pasta specialty from Sardinia. As well as porcetto, suckling pig roasted in the Sardinian style with herbs and grilled.
Vinification
The destemming is followed by pressing gentle pressing of the berries. A small part of the recovered Mustes is transferred to amphorae (of 1000 l), in which the Maceration thanks to naturally controlled temperatures and the small quantities to be vinified 20-25 days takes place on the mash. The remaining amount ferments at controlled temperature in steel tanks. Fermentation takes place according to the BioIntegral approach, i.e. without the use of enzymes or pure-bred yeasts.
