Tasting note
A slight note of flint and pebble underline the aromas of pomegranate and grapefruit on the nose. The palate immediately reveals a firm and tangy vibrancy of lemon and grapefruit. The complexity is underlined by shades of shale and minerals. The palate is fresh and juicy with lively acidity. Unmistakably Sauvignon Blanc, this wine is focused, crisp and balanced with good concentration, body and length of taste.
Culinary recommendation
Goes well with an aperitif or as an accompaniment to fish or seafood.
Vinification
Altima is located in Elandskloof, an isolated valley north of Viliersdorp, which is 5 km wide and is surrounded by steep mountains that rise 1 km from the bottom of the valley. This steep topography means that the valley receives less direct sunlight due to the overshadowing mountains, which, together with an altitude of 600 to 800 m, means a very cool climate for the valley. This special terroir produces wines with a high natural acidity. The grape harvest takes place much later than in other places in the Western Cape, with harvesting usually starting at the beginning of March. The vineyards produce an intense Sauvignon Blanc with a fresh expression of gooseberries, lemons and freshly cut grass. Three different plots were harvested in several rounds, each of which contributed a range of flavors from grassy green peppers to passion fruit, melons and gooseberries. The grapes were picked by hand into small lugboxes early in the morning and transported to the cellar by refrigerated truck. The entire fruit was stemmed and crushed before nightly maceration on the skin ensured maximum aroma development. The initial juice from each plot was inoculated and fermented separately in stainless steel tanks with selected yeast strains. The wine then matured on fine yeast for 4 months.
