In Spain, cava is called a sparkling wine that is produced with bottle fermentation, i.e. using the traditional method. Even though cava can be produced in most wine-growing regions in the country, Catalonia and the Penedès region are the center. Here, in the town of Sant Sadurni, not far from Barcelona, is home to the Vins El Cep winery. Maite Esteve, who has been running the winery for many years, uses only the best Pinot Noir and Chardonnay grapes from old vines from her own, organic vineyards for the dry MIM brut nature Gran Reserva. After bottle fermentation, the wine matures on the lees for more than 30 months and thus becomes a Gran Reserva. In the name MIM, the word “mimar” plays along, caress, in the sense of: mimar la natura. Fine fruit, lively freshness harmonizes with elegant classics.
