About the wine
This Chardonnay draws its power and energy from the gravelly, slate soils in Burgundy. The winemaker from the French winery Domaine Billaud-Simon transforms it into a real treat with great emotion. Vinification
The grapes are harvested by hand to preserve the quality of the fruit. The grapes are sorted manually on a vibrating sorting table in order to process only the healthiest fruits. The must is gently drained before it is gently extracted with a pneumatic press to preserve as much flavor as possible. Static cold storage of the musts in stainless steel containers for 12 to 24 hours to obtain a bright, clear juice. Alcoholic fermentation and malolactic fermentation take place spontaneously in stainless steel tanks. Ageing for 16 months in stainless steel tanks, 10% is aged for 16 months in barriques. This ageing preserves freshness and minerality, which can be paired with complexity and body fullness. The wine is rebottled twice before being bottled at the end of autumn.
