About the wine
Billecart-Salmon has been owned by the same family for almost 200 years and is now managed by François Roland-Billecart in the 7th generation. It is a long tradition that is maintained with a lot of love. But prestige and tradition alone are not enough to stand up to the big champagne houses, the quality must be right and that is the case here. Billecart-Salmon cultivates a vineyard area of 30 ha in the best locations with great care. The champagnes are full of nobility, very balanced, full of finesse and elegance. Classic champagnes, wines that ennoble any occasion.

Tasting note
Hidden passion ñ 19th century. Delicate and melancholy, only a hint of everything, caramel in the background. Very fine and noble on the palate, almost shy and yet with a large, pure charisma, tender raspberries until the long finish. A champagne full of nobility and restraint, which perfectly accompanies fine dishes such as wild salmon and sushi.

Aperitif, Asian cuisine, saltwater fish.
Vinification
Highly selective reading by hand. Very slow and long fermentation with its own yeasts at cool temperatures. Long maturation on the lees.
