About the wine
Billecart-Salmon has been owned by the same family for almost 200 years and is now managed by François Roland-Billecart in the 7th generation. It is a long tradition that is maintained with a lot of love. But prestige and tradition alone are not enough to stand up to the big champagne houses, the quality must be right and that is the case here. Billecart-Salmon cultivates a vineyard area of 30 ha in the best locations with great care. The champagnes are full of nobility, very balanced, full of finesse and elegance. Vinification
Highly selective reading by hand. Very slow and long fermentation with own yeasts at cool temperatures in steel tanks, sometimes malolactic fermentation. Maturation on lees for 30 months. Dosage 40g/L
