About the wine

Billecart-Salmon has been owned by the same family for almost 200 years and is now managed by François Roland-Billecart in the 7th generation. It is a long tradition that is maintained with a lot of love. But prestige and tradition alone are not enough to stand up to the big champagne houses, the quality must be right and that is the case here. Billecart-Salmon cultivates a vineyard area of 30 ha in the best locations with great care. The champagnes are full of nobility, very balanced, full of finesse and elegance. Classic champagnes, wines that ennoble any occasion.

Tasting note
Diva after the performance. What kind of prelude, exuberant foaming applause, what tension and what relaxation follows, initially tart, firm, lots of yeast, still firm, then softer, warmer, more dissolved, flowing through with a feeling of well-being, nut and yellow, orange, ripe fruits, everything fits in. On the palate, an excited bright joy, very clear, wide awake and concentrated, and then this relief, this satisfaction, this basking in applause after the concentrated performance, the bursting mineral tension that now flows so wonderfully fresh and tart into exuberant joy. Great champagne that is always tart, always fresh, so wonderfully falls, rises, finds itself and thus shines loosened. Pure joy!

Vinification
Highly selective reading by hand. Very slow and long fermentation with own yeasts at cool temperatures in steel tanks, sometimes malolactic fermentation. Maturation for up to 10 years on the lees. Dosage 4g/L
