About the wine
Billecart-Salmon has been owned by the same family for almost 200 years and is now run by the 7th generation of François Roland-Billecart. It is a long tradition that is maintained with love. But prestige and tradition alone are not enough to stand up to the big champagne houses, the quality must be right and that is the case here. Billecart-Salmon cultivates a vineyard area of 30 ha in the best locations with great care. The champagnes are full of nobility, very balanced, full of finesse and elegance. Classic champagnes, wines that ennoble every occasion.
Tasting note
Thomas Mann - anyone who has such a hard time on the inside is entitled to some external comfort. This is not champagne that pops, froths, to celebrate, it has a dignified nobility, light to warm golden fruit, yeasty, slightly oxidative, not loud, but rather privileged peace and quiet. Discreet frothing on the palate, established style, that is a great participation in the world, and not nervous involvement, calm, reflective and attentive, critical, a fresh, bitter focus in the sublime calm. Wonderful champagne for quiet moments and winter.

Vinification
Very selective reading by hand. Very slow and long fermentation with our own yeasts at cool temperatures in steel tanks. Aging on the lees for 9 years. Dosage 2 g/L.
