About the wine
Geoffrey Delouvin is the eleventh generation to run the small and up-and-coming winery. In the Vallée de la Marne, together with his father, he presses distinctive champagne primarily from Pinot Meunier and uses the Solera process for non-vintage champagne. In 2018, Geoffrey was already able to receive the Jeunes Talents du Champagne prize in the Pinot category, which predicts a promising future for the winery.
Tasting note
Golden yellow color with aromas of lemon, yuzu and grapefruit, plus ripe red apple, white pear and autolyses flavors such as brioche, sponge cake and freshly baked, lightly toasted white bread. On the palate, the champagne is pleasantly full-bodied with fine bubbles and a well-balanced body. The finish is long-lasting with fine fruit notes and subtle saltiness.
Culinary recommendation
Flaschenpöstler-Tipp: Champagne Fauve Brut Nature AC passt perfekt zu Austern, Krustentieren und Apérohäppchen.
Vinification
Selected yeasts and fermentation in thermoregulated stainless steel tanks for six months, without malolactic fermentation and with minimal sulphurization. The champagne is then aged “sur lattes” for 60 months without dosage.
