About the wine
Billecart-Salmon has been owned by the same family for almost 200 years and is now managed by François Roland-Billecart in the 7th generation. It is a long tradition that is maintained with a lot of love. But prestige and tradition alone are not enough to stand up to the big champagne houses, the quality must be right and that is the case here. Billecart-Salmon cultivates a vineyard area of 30 ha in the best locations with great care. The champagnes are full of nobility, very balanced, full of finesse and elegance. Classic champagnes, wines that ennoble any occasion.
Tasting note
Manic artist. It has these two sides, the aesthete that so enchants, the violets, and the yellow, bright and citrus-clear fruit, and then about the doubts, including that of the Meunier, in the uncompromisingly dissecting, this cutting chalky and tart minerality. It foams so gently on the palate, but that is not innocence, that is the happiness of the detached spirit, because underneath it is taut, tart, razor-sharp the realist, dry mineral, salt in the wound, who feels (and also appreciates) the joy as well as the pain, and closes soothed! Independent and so good.
Culinary recommendation
Flaschenpost team tip: Champagne Meunier Extra Brut RDV N°1 AOC goes perfectly with rack of lamb, risotto and hard cheese.
Vinification
Highly selective reading by hand. Base wine from 2014. Very slow fermentation with its own yeasts at cool temperatures in steel tanks. Maturation on lees for 52 months.
