About the wine
Geoffrey Delouvin runs the small and up-and-coming winery in the eleventh generation. In the Vallée de la Marne, together with his father, he produces champagnes with strong character mainly from Pinot Meunier and uses the solera process for non-vintage champagnes. In 2018, Geoffrey was already able to receive the prize from Jeunes Talents du Champagne in the Pinot category, giving the winery a promising future predicted.
Tasting note
Golden color with elegant perlage. Intense aromas of earth, clay and gypsum, lots of character with a dry but persistent finish. A champagne that shows that even a Pinot Meunier can push its limits.
Culinary recommendation
Flaschenpost team recommends this Champagne Sauvage Brut Nature AC to accompany risotto, hard cheese and rack of lamb.
Vinification
Selected yeasts and fermentation in thermo-regulated stainless steel tanks to preserve fruit and freshness. This wine is made from three consecutive vintages, which allow this Brut Nature to perfectly combine balance and complexity. The grapes come from three carefully worked plots and as many different soils as possible, in order to get closer to the mosaic and characteristics of the Vandières soil. This wine made from 100% Pinot Meunier matures “on latten” for 36 months and is bottled without dosage.
