This rare grape variety is cultivated almost exclusively in French Savoie and in the Lake Geneva region. The Savoy people often call it “Roussette” because this grape is only ripe when it has taken on a reddish hue. For many years, the entire winery has been managed according to environmentally friendly principles. Monitoring the degree of ripeness to determine the harvest time, limit yield, harvest and selection by hand so that the berries remain intact. After a gentle pressing, alcoholic fermentation takes place. Aging on fine lees in oak barrels. Easy filtration.
