Tasting note
Very intense on the nose: lavender, thyme, spices, cassis and blackberries. Black cherries and plums on the palate, present yet wonderfully ripe tannins. Very complex and elegant, with a well-balanced, well-structured acidity. Long, almost creamy finish.
Culinary recommendation
Goes well with beef, venison, lamb.
Vinification
Each of the 13 grape varieties is individually harvested and vinified by hand. Winemaking takes place in oak barrels for Syrah and Mourvèdre, for the other varieties in traditional concrete vats. After malolactic fermentation, the varieties are blended. Storage in large woodfuder for at least one year.
