About the wine
With the dominant white wine 2016 — Chenin Blanc Cellar Selection, you can offer your family and friends something very special. The winemaker from the South African winery Kleine Zalze Wines has absolutely mastered his craft. Style and finesse are the characteristics of this white wine, which originates in the fertile and magnificent landscape of the coastal region. Culinary recommendation
Wonderful aperitif wine that also goes fantastically with creamy noodle dishes, salmon sashimi or fried chicken.
Vinification
The grapes for this wine come from selected vineyards in Stellenbosch and Paarl. Due to the nature of the bush vines, careful canopy management was carried out so that no grapes were exposed to excessive sunlight and the grapes ripen evenly. All vineyard plots were harvested at optimal ripeness and vinified separately. The mash received skin contact for 12 to 24 hours before only the free-running juice was transferred to the tank for fermentation. The wines were fermented at low temperatures with selected yeast strains to highlight the specific characteristics of each vineyard. After fermentation, the wine was left on the fine yeast for a further four months before the final blend was put together.
