About the wine
Do you already know the outstanding Sangiovese Chianti Classico DOCG with the 2013 vintage? If not, it's time! Fertile and blooming landscapes of Tuscany give us these grapes, from which the winemaker from the Italian winery Fontodi conjures up this red wine with refinement and experience. Culinary tip from Flaschenpost team: This Sangiovese is excellent to serve with beef or pizza.
Tasting note
Giovanni Manetti's winery, built in the most beautiful Tuscan style with modern touches, is hard to beat in terms of perfection. In addition to the use of noble materials and formal beauty, the guiding principle during the conception was the gentle processing of the grapes to the finished wine. All transports of grapes and wine take place in free fall, i.e. without pumps. The grapes arrive at the very top, one floor down are state-of-the-art fermentation containers, in which the mash ferments at a controlled temperature. Even further down is the beautiful barrique cellar, embedded deep into the earth's interior, where the wine matures with the necessary peace and quiet. The grapes for Chianti Classico come from different plots. Everything is designed to produce an incredibly dense wine: extremely low yields (not above 4 dl/m2). The grape mash ferments spontaneously, without the addition of breeding yeasts. The ageing takes place in barriques made from Allier and Tronçais oak and lasts one year. The result exceeds all expectations. The typicality of Sangiovese is excellent, ripe notes of wild berries and a hint of smoke are clearly perceptible in the bouquet. There is opulence on the palate.
Culinary recommendation
Goes well with lamb, beef, veal, venison, pork and grilled meats.
Vinification
The mash fermentation takes place for 14 days at a controlled temperature in stainless steel tanks. The wine is then placed in Allier or Tronçais oak barriques for 12 months.
