Tasting note
Dark, dense ruby red. On the nose, wonderfully intensely scented with notes of ripe plums, fruit compote and sweet warm spices, complex and rich in finesse. Juicy, complex and dense on the palate. Once again, fine, ripe aromas, memories of rum pot are awakened. A composition of sweet-ripe fruits with a very harmonious tannin structure, accompanied by elegant acidity and a long, aromatically lasting finish.
Culinary recommendation
A treat with hearty meat dishes, game and also with ripe gorgonzola or parmigiano.
Vinification
The best Valpolicella grapes for Amarone are harvested at the beginning of October. To dry them, the grapes stay in well-ventilated rooms on special slatted frames for around three months. In the process, they lose up to 40% of their original weight. At the same time, sugar, flavor and extract are concentrated. Fermentation begins in temperature-controlled steel tanks in mid-January, which lasts around 45 days. The wine is then aged in wooden barrels for several years.
