Tasting note
This Crémant de Bourgogne - Méthode Traditionnelle - is a so-called Rosé de Macération (maceration for around 12 hours) and is made from 100% Pinot Noir. The grapes come from a single vineyard of only 0.5 ha. The basis is the 2018 vintage, which fermented with indigenous yeasts in steel tanks and allowed to mature in the bottle for over two years before being disgorged. Inviting nose picture with aromas of morello cheese, plum skin, juicy berries and some red rhubarb, plus floral-spicy notes of candied ginger, dried flowers and nuts. On the palate, with a nice, delicate citrus freshness, elegant spiciness and a subtle wininess on the finish.
Culinary recommendation
Great for an aperitif, with melons and spicy raw ham, fresh figs au gratin with goat cheese, but also with beetroot risotto with fried mushrooms.
