About the wine
Since 2013, Cave de l'Hôpital has been producing its wines biodynamically and with Demeter certification. The soils are only partially cultivated, the vines are strengthened with herbal mixtures and preparations. They no longer use pesticides and herbicides at all. This Chasselas goes perfectly with Moitié Moitié, which consists of Vacherin and Gruyère.

Tasting note
Very elegant, finely balanced nose of gooseberries and lemon mint, also sweet apricots and a slight yeast note. On the palate, great intensity, lime blossom aromas and lime; gradually also mineral notes; overall very expressive and always aromatic until the long-lasting finish.
Culinary recommendation
Goes well with fish, veal, vegetable gratin, aged cheese (e.g. Gruyère, Emmental cheese, alpine cheese)
