Tasting note
This lively, classic-style Sauvignon Blanc comes in a brilliant lemon-lime color. The nose is complex with an array of tropical fruits, ripe figs and gooseberries. These crisp aromas are repeated in the mouth, together with a mineral character, followed by a long fruity finish. The distinctive aromas support a wonderfully balanced palate, which combines the purity of the ripe fruit with a long-lasting, harmonious finish.
Culinary recommendation
Goes very well with summer dishes and salads. Try it with melon gazpacho with tuna tataki or simply chilled for an aperitif.
Vinification
Gentle slopes exposed to the microclimate of the Atlantic Ocean have the advantage of cool air currents and morning fog. In summer, a firm southeasterly wind fans out the vines and ensures temperate and sunny ripening conditions. Together with decomposed granite soils and high clay content, the vines offer an intense taste. The grapes are harvested at different stages of ripening during the night and vinified separately. They get shell contact for 3-12 hours, are pressed and inoculated with selected yeasts. The alcoholic fermentation takes 3 weeks at 14-16°C and the wine is then bottled.
