Tasting note
Golden yellow color. Pinot Gris gives Dulcesco its sweet fruit and Chardonnay gives it its structure. The Riesling Sylvaner gives it its lightness and fresh nose. Sauvignon Blanc gives it fresh acidity. On the nose, little with not too rich sweetness, but lots of fresh fruit (peaches and apples). On the palate, then a seductive sweetness with wonderful aromas of Cavaillon melon and some wild honey. Very subtle yet present acid-fruit interplay. Long and mouth-filling finale.
Culinary recommendation
It goes well with pies, terrines, goose and duck liver, soft cheeses (especially gorgonzala, Roquefort), black chocolate and orange cakes, and creamed ice cream.
Vinification
Only fully ripe, sweet grapes are used for this unusual sweet wine. The grapes are carefully checked and carefully placed in boxes with the stalks. They will be frozen like this for 40 - 40 days. After a short thawing period, the grapes are pressed, again with stalks. The leaking juice brings it to an impressive 162° Oechsle. Fermentation and subsequent ageing take place exclusively in steel tanks. The residual sugar in the finished wine is 178 gr/liter. More than 6 kilograms of grapes are needed for one liter of wine.
