Tasting note
A Shiraz with a cool climate character and bright red color. On the nose, the distinctive notes of pepper are complemented by aromas of perfume and ripe red fruits. Mineral and earthy notes develop in the glass, enveloped in a spicy, smoky aroma. On the palate, there is a wonderful taste concentration of pepper, spices and delicious red fruits. Soft, integrated tannins and a full, structured mid-palate are retained and result in a long, tasty finish.
Culinary recommendation
Goes well with strong meats such as game, lamb and beef.
Vinification
The orientation of the vineyards ranges from east to north and northwest and is perfectly positioned for a Shiraz. Eleven Shiraz blocks are laid out on various plots of Eagles' Nest at an altitude between 100m and 400m above sea level. These blocks have a total area of 4.32 ha. Due to the different altitudes and gradients of these blocks, as well as the different meso and microclimates to which the vines are exposed, several small batches of grapes were harvested and processed individually to enable the production of individual Shiraz components. This ultimately results in a complex and multi-layered wine. The individual components were harvested by hand and cooled before processing. The grapes were then sorted by hand, destemmed and pressed in small and medium-sized open fermentation vats. The pumping was carried out three to four times a day. After fermentation, the wine was removed and the skins were pressed separately. The Syrah was then transferred to French oak barrels. After 18 months in barrels (35% new wood), selected components of the wine were blended before being bottled in December 2021.
