About the wine
Very complex, nuanced wine. The full body, fresh acidity and silky tannins are in perfect balance and give this Riserva a harmonious and long taste.

Tasting note
Ruby red with crimson reflections. Very complex, nuanced bouquet with strong notes of small ripe red fruits (sour cherry) and elegant notes of herbs (thyme), sweet spices such as vanilla, caramel and bitter cocoa. The persistent, deep and velvety tannins that blend well between volume and freshness are balanced, give this wine a harmonious and persistent taste and a sure prospect of bottle maturation.
Culinary recommendation
Goes well with game, roasted red meat and aged cheeses. Perfect as a meditation wine.
Vinification
After destemming and pressing, the must with the skin ferments in steel tanks for 30 days, where undercutting and délestage take place at a controlled temperature of no more than 30°C. The must is then smeared and pressed gently. The malolactic fermentation takes place in concrete barrels. 24 months in French oak tonneaux, with 50% maturing in new barrels and the other 50% in both first and second occupancy barrels. Then preserved in concrete barrels until bottling.
