Tasting note
Ruby red with subtle purple hues. On the nose, clear hints of red berries, morello cherries and black cherries. Very balanced tannins and impressive fullness, lots of spice and long-lasting length.
Culinary recommendation
This fruity and slender Etna Rosso is the perfect companion to Fondue Chinoise. It also pairs well with curry, garlic and other spicy flavors, and is a refreshing counterpoint to hearty sauces.
Vinification
The grapes are picked by hand and immediately brought to the winery in small boxes, where they are selected by hand. The grapes are destemmed and pressed, then fermented in cement tanks for 10-12 days at a temperature of 22/25°C. After fermentation, the grapes are processed with a traditional press. Aged for around 6 months in large wooden barrels and 3 months in bottle.
