Blue cheese dessert

A classic Australian “port” of elegant style. The careful treatment worked towards a drier rather than too sweet, heavy style. Tawny is made from the typical “port” grapes Grenache and Shiraz. In order to obtain the optimal fruit aroma, it was fermented in its skin and underwent extensive maturation in small oak barrels, enriched with a fine brandy distillate before the final composition.
