Vinification
A few words about vinification: The Fiano grape variety is an autochthonous grape variety, which is mainly native to southern Italy. The grapes for this Fiano come from approx. 15-year-old vines, which are rooted in the immediate vicinity of the sea. The salty sea breeze provides a subtle mineral finish here. The grapes are picked by hand and picked again on the sorting table in the cellar. Fermentation takes place in stainless steel at a controlled temperature. The expansion takes place exclusively in steel tanks.
