Tasting note
The Cuvée Essence Brut is only used in the very good Volumes produced and offered with dates. It consists of 90% Chardonnay, the rest Pinot Nero. Ageing on the yeast starts 6 months after harvesting and lasts at least 30 months, the wine rests for a further 6 months in the cellar before it is approved for sale.
