Vinification
Fermentation in steel barrels and refinement of the best plots in oak barrels. Preparation of the cuvée in spring after harvest, exclusively with wines from the specified vintage. Second fermentation in bottle and subsequent refinement on the yeasts for at least 7 years, followed by a further 6 months after disgorgement. Dosage Extra Brut.
