Tasting note
Sailors call the bowline the “king of knots” - a strong, simple knot that symbolizes union, completion and eternal devotion. This white blend ties the knot” between Sauvignon Blanc and Semillon. An elegant Bordeaux blend with aromas of ripe fruits such as white pear and figs with a subtle layer of toasted almonds. A fresh and crisp palate with hints of well-integrated oak that underlines the wine's richness and complexity.
Culinary recommendation
Goes well with smoked salmon, mussels with fried chicken or a chicken vindaloo.
Vinification
Each grape variety was vinified separately. Pressed at 8°C and brought into contact with the tray for 8 hours. The free run juice was left on the lees for 2 days. 50% of the Sauvignon Blanc was fermented in stainless steel tanks and then blended with 10% Sauvignon Blanc and 40% Semillon from the wooden barrel. The wine then matured for 10 months in 400l wooden barrels from the Burgundian cooper Cooper. The final blend contains 60% Sauvignon Blanc with 40% Semillon.
