Tasting note
A charming wine with an exquisite balance and refined elegance, with aromas of paprika, chocolate and sweet red berries on the nose. On the palate, lively undertones of plum and plums rounded off by cedar notes. The velvety finish is full of dark fruits, chocolate and peppermint framed by soft tannins.
Culinary recommendation
Accompanies fantastic stews or grilled, dark meats such as cote de boeuf. Try this red wine with braised oxtail with a Bordeaux sauce, spice pear and celery puree.
Vinification
The grapes were destemmed after extensive sorting and fermented with regular push downs for a gentler extraction as whole grapes. The mash was then exposed to shell contact for a further 30 days. The wine was obtained by a light pressing and 50% was aged in new and 50% in used French oak barrels for 18 months.
