Tasting note
Full ruby red color, ripe and dense. An explosion of fruity aromas, with hints of ripe dark berries and ethereal, pleasant roasted aromas on the bouquet. Mineral and spicy notes with notes of vanilla and butter. It also proves to be a great wine on the palate. The high, very well-integrated alcohol content underlines the full tannins and makes it appear full and harmonious on the palate. Distinct and long aftertaste.
Culinary recommendation
An ideal accompaniment to game, dark meats and mature cheeses.
Vinification
To ensure a balanced ripeness of the grapes, grapes and leaves are thinned out several times in summer. The grapes are selected during harvest, picked by hand and placed in small boxes to dry. The drying period lasts about three months, during which the grapes lose 35% of their weight and reach an optimal sugar concentration. The partially dried and cold grapes are stemmed and fermented at 10° in a temperature-controlled manner. After about 10 days, the pomace is submerged and pumped around, and after a further 30 days, the pomace is separated from the new wine, which continues its slow fermentation in small barrels of French and American oak and Hungarian acacia. The wine is aged in barriques for 20 months, followed by a further 6 months of bottle fermentation.
