About the wine
From the winery's flagship series. Unusual for New Zealand: a blend of 25% Sémillon and 75% Sauvignon Blanc. The name Gravestone comes from the basalt stones at the head of the volcanic vineyard.

Tasting note
The bouquet is full of complex aromas of lime, peach, gooseberry, elderflower, smoke and mussel shell. The palate is focused and structured with lively acidity and a stimulating chalky mineral note. A long-lasting, fresh finish.

Very versatile, e.g. fish, seafood, fresh salads, vegetables
Vinification
The Sauvignon Blanc was pressed unstemmed and bottled directly into Puncheon barrels (90% old oak, 10% new acacia) and fermented with wild yeast. The Sémillon was gently pressed and, after filtration in stainless steel tanks, filled and fermented in older barrels. The wine was stored on the yeast bed for 6 months before it was cut and bottled.
