The hand-picked and selected grapes, placed very carefully in stackable boxes, are then immediately pneumatically pressed in the old vaults of the wine cellar with minimal pressure. The must is fermented at a cool but not too cool temperature in steel tanks, in which the resulting young wine is also further aged.
