About the wine
To get a feel for the barren landscape beauty in Catalonia, there is no way around this red wine, which the Spanish winery Vins Nus masters with a keen sense of texture. If we can offer something special for Christmas 2021, it's this provocative Grenache 2019 — InStabile №9 Mea Culpa. Flaschenpost team tip: Combine this grenache with vegetables or burgers with blue cheese.
Tasting note
Reductive on the nose for the time being, wet stones and table chalk garnish the tentative fruit, which is badly buttoned up and only becomes a bit more talkative with sufficient ventilation. Beetroot and the leaves of the currant bush, plus spicy aromas of black walnuts, licorice and unroasted coffee. The palate is initially characterized by a bit of carbon dioxide, but this is not a defect. If you don't like this as a stylistic device, boldly grabs the carafe and plunges the unstable lad headfirst into the hollow body. Juicy fresh with tart tannins, the CO2 soon says goodbye and lets it glide across the palate in vibrating transparency. The play of fruit, spice and bittersweet tannin gives it a peculiar attractiveness and, above all, rapid drinking flow.
Culinary recommendation
Flaschenpost team recommends this unstable №9 mea culpa to accompany spicy dishes, red meat and vegetables. Our recommendation: The ideal drinking temperature for the organic red wine is a slightly chilled 16°-18°C.
Vinification
Half is fermented with whole stems in steel tanks. Spontaneous fermentation in a separate environment (Laab). 50% in ceramic eggs of various formats and 50% in stainless steel.
