About the wine

Hans Nittnaus is a thought leader, a visionary, and a gifted winemaker. Anita and Hans run the 30-hectare winery biodynamically, the wines are full of life, extremely precise and completely unvarnished, also thanks to the very careful use of wood and the very moderate extraction. His son Martin goes even further in the direction of minimal intervention. This is where fining, filtering, and even added sulfur are questioned. At Nittnaus, they are never completely satisfied, always looking for the perfect interpretation of the terroir and so often they find what they are looking for! Tasting note
Breakfast on the mountain lake. It's fresh, wide, the view of the mountain, the mineral tones, the meadows, grassy, straw-y, but also creamy, warm, butter, nuts, slightly floral all around and, of course, the bright fruits, pears, apples, and such a beautiful expanse. On the palate, this relaxed freshness into the day, the soft warmth of a morning sun in the fresh air, nice, tart mineral, the rock, and yet so relaxed, balanced, the whole atmosphere. What a wonderful moment, this healthy energy, this anything but hectic vitality. Sooo good!
Culinary recommendation
Von den Flaschenpöstlern empfohlen: Kalk & Schiefer Weiss harmoniert bestens mit Spargeln, Geflügel und Fisch mit Kräutern.
Vinification
Selective reading by hand. A quarter with mash fermentation, fermentation with the vineyard's own yeasts, aging and maturing for 12 months on fine yeast.
